“Trust the process” i said 1,5 years ago, when we roasted the GUNUNG TUJUH honey and washed version side by side. This year we cupped the honey lot as well, but we thought the Natural was much more spectacular, probably to the added Anaerobic processing, taking place between the picking and the drying, when they keep the cherry in a closed environment for a couple of days. This way they enlarge all flavors and add some funk, along with this very unique hearty aftertaste, almost like umami. Check it out, you’ll love it.
