Rob Says: A new season and switching our most important Brazil IAN coffee from Pulped Natural to Natural processing.
Why? Every crop is a different ball game and this years crop is visibly less fruity and fatty than a year earlier. Most Pulped Naturals are a little bit cleaner, but we miss sweetness and thickness this year, which is always more present with Natural processed coffees.
Most of the times do naturals tend to be too earthy, but at the BOM SUCCESO Fazenda, managed by Jose Vitor Luz and his wife Luiza, they were able to keep this all within decent measures. All cherries from this Single Estate coffee is handpicked and dried 28 days on the patio. After that the coffee is transferred to the dry mill where it is put to rest another three months before shipping it to Antwerp.
